Basic Picante sauce recipe

A Mexican tomato based sauce using Jalapeno chiles, onion and coriander. This sauce is cooked and can be used in recipes that call for a tomato based sauce such as burritos, enchiladas or chimichangas. The Picante salsa is the uncooked version of this sauce and it uses similar ingredients. Salsa Picante can be used as a dip with tortilla chips or as a side dish with many Mexican dishes.
Preparation time: 5 minutes, Cooking time: 30 minutes, Serves: 4 

Ingredients

1 large onion, finely chopped
1 fresh jalapeno pepper, finely chopped
6 medium ripe tomatoes, seeded and finely chopped
6 Tbsp vegetable oil
1 clove garlic, minced
1 tsp salt
1/4 tsp granulated sugar
1 Tbsp finely chopped fresh cilantro (coriander)

Directions

Heat the oil over medum in a saucepan. Saute the onio for about 10 minutes, until soft and transluscent. Add the remaining ingredients, stir, reduce heat and simmer for 10 more minutes.

For a milder version, use 1/2 or 1/3 of the jalapeno chili.
