Beef and Chipotle Burritos recipe

Flour tortillas filled with shredded beef, cheese, salsa and sour cream. The beef is cooked for several hours in Chipotle chiles, tomato, garlic, onion and other spices.
Preparation time: 10 minutes, Cooking time: 300 minutes, Serves: 4 - 6 

Ingredients

1 1/2 lb. boneless beef round steak, trimmed of fat and cut into 6 to 8 pieces
3 cups diced tomatoes
1 small onion chopped
1 - 2 Chipotle chiles in adobo sauce, chopped
1 tsp dried oregano
1/2 tsp ground cumin
1 clove garlic, minced
6 (10 inch) flour tortillas
1 cup shredded cheddar or Jack cheese

Pico de Gallo salsa (recipe below)
Sour cream

Directions

Put the meat, tomatoes, onion, Chipotle chiles, oregano, cumin and garlic into a large cooking pot. Cover and cook over medium high heat for 4 to 5 hours. Remove the meat from the pot and shred using two forks.

Warm tortillas in the oven or microwave, according to directions on the package. Spoon one sixth of the meat along the center of a tortilla. Top with cheese, pico de Gallo Salsa and sour cream. Roll up the tortilla and set aside. Repeat the procedure for the remaining tortillas.

Serve with extra salsa and sour cream.

Notes and tips

Pico de Gallo salsa recipe

Ingredients
2 medium ripe tomatoes, finely chopped
2 Tbsp finely chopped onion
2 Tbsp snipped fresh cilantro (coriander)
1 fresh serrano chile, seeded and finely chopped
Dash of sugar

Method
In a bowl combine all of the ingredients well. Cover with plastic wrap and refrigerate for a few hours.

Konstantinos, you can serve the burritos with rice, guacamole, beans, sour cream, cheese or anything else you like. It is all up to you :-)
