Classic Guacamole (with Ancho chiles) recipe

An original Mexican guacamole dip using Ancho chiles. Use with typical Mexican dishes such as fajitas or chimichangas.
Preparation time: 5 minutes, Cooking time: 20 minutes, Serves: 6 

Ingredients

2 ripe avocados, seeded, peeled and cut into small chunks
1 Tbsp lime juice
1 clove garlic, mashed
2 Ancho chiles, soaked in water, drained and finely chopped
1 small onion, finely chopped
1 Tbsp olive oil
1 tsp salt
1 medium tomato, finely diced

Directions

Soak the Ancho chiles in hot water for 15 minutes. Drain and finely chop.

In a bowl combine the avocados, lime juice, garlic, ancho chiles, onion, olive oil and salt. Using a fork, roughly mash and combine all ingredients. Add the diced tomato and stir well.

Cover with plastic foil and refrigerate for at least 30 minutes to allow the flavours to develop.
