Frijoles a la charra recipe

A Tex Mex recipe for beans, cooked in a tomato, bacon and chile sauce, flavored with coriander and chipotles. A simple, hot and spicy bean recipe for people who like the Tex Mex.
Preparation time: 5 minutes, Cooking time: 40 minutes, Serves: 4 

Ingredients

4 slices of bacon, chopped into 1-inch pieces
1 medium onion, finely chopped

2 cups cubed freshed tomatoes
2 garlic cloves, finely chopped
2 - 3 jalapeno chiles, finely chopped
2 chipotles in adobo, finely chopped
1 cup chopped cilantro (coriander)

1 cup chicken stock
6 cups of cooked pinto beans
Salt to taste

Directions

In a skillet over medium heat add the bacon and onion and cook until the bacon is crispy and the onion is soft.

Add the tomatoes, garlic, chipotles, jalapenos and coriander and cook for 8 to 10 minutes, stirring occationally.

Add the chicken stock and mash up the tomatoes using a fork.

Add the beans and simmer for 20 minutes. Taste and adjust with salt to taste.

Garnish with some more fresh coriander leaves and serve.
