A great and easy to make guacamole dip, great for parties.
Preparation time: 10 minutes, Cooking time: 30 minutes, Serves: 12
4 ripe avocados, peeled and seeded
1/2 cup white onion, chopped
2-4 serrano chilies, chopped (adjust quantity to your liking)
3/4 cup tomato, seeded and drained
1/4 cup coriander, chopped
2 Tbsp fresh lime juice
1 tsp salt
Put onion, chilies, coriander. lime juice and salt in a food processesor and process until smooth. In a mixing bowl, add the avocados and using a fork, mash them roughly. Add the puree mixture and the tomatoes and stir with a fork, until everything has been blended. Taste and adjust with more lime juice and / or salt, if needed. Cover with plastic wrap and store in the refrigferator for at least 30 minutes.
Serve guacamole dip with tortilla chips.
