Mexican salsa recipe

A typical, all purpose Mexican salsa, easy to make and great with most Mexican dishes. You can make it as mild or as hot as you like by adjusting the amount of jalapenos and chili powder used. This salsa will last for up to a week in the refrigerator.

Ingredients

3 cups chopped fresh tomatoes
2 jalapeno peppers, diced
1 cup coriander leaves
2 cloves garlic, minced
Juice from 1/2 lime
1/4 cup finely diced onion
1 Tbsp chili powder (or to taste)
Salt and black pepper to taste
A dash of sugar

Directions

Put all ingredients in a blender and process until smooth. Taste it and adjust with more salt, pepper, sugar and chili powder to taste. Empty in a bowl, cover with plastic wrap and refrigerate for at least 2 hours. Serve with more coriander leaves ont top.

Makes about 4 cups of salsa
