Peri Peri chicken wings recipe

Delicious and easy to make, sweet, sticky Peri Peri (also called piri piri) chicken wings, perfect as an appetizer.
Preparation time: 30 minutes, Cooking time: 20 minutes, Serves: 6 - 8 

Ingredients

24 Chicken wings
1 cup sweet Peri Peri marinade (see recipe below)
Salt and freshly ground black pepper to taste

Directions

Preheat oven to 220°C.

Place the chicken wings in a large bowl and pour over the marinade. Season with salt and black pepper to taste, then toss well until every chicken wing is covered with the marinade. Cover with plastic wrap and marinade in the refrigerator for at least 30 minutes.

Grill marinaded chicken wings for 15 to 20 turning every 4 to 5 minutes.

Serve on a large serving dish on a bed of lettuce leaves.

Notes and tips

Homemade Peri Peri chicken wing sauce

Ingredients

3 pickled jalapeno peppers, chopped
3 dried Anaheim chiles
2 Chipotle chiles
1/2 cup cider vinegar
10 - 12 Tbsp olive oil
1/2 tsp cayenne pepper
1 tsp chili flakes
2 tsp garlic powder
2 Tbsp paprika
2 tsp salt
2 tsp dried oregano

1/3 cup brown sugar
1/4 cup molasses
1 Tbsp honey

Method

Add all the ingredients except the brown sugar, honey and molasses in a blender and process until smooth (use as much olive oil as necessary to achieve a smooth consistency). Empty the blended ingredients in a saucepan over medium heat. Add the brown sugar, molasses and honey, stir well and bring to a boil. Lower heat and simmer for about 15 minutes. Empty the sauce in a jar and let cool, then refrigerate until needed.
