Peri Peri hot chicken stir fry recipe Share this recipe on FacebookA simple, delicious stir fry chicken dish made with the hot version of the famous Peri Peri sauce and lots of vegetables. The dish can be ready in under 30 minutes and can be served with steamed or fried rice. Preparation time: 10 minutes, Cooking time: 15 minutes, Serves: 4
Ingredients 500g
chicken breast cut in 2 inch long strips 2 Tbsp vegetable oil
1 inch fresh ginger, grated 3 garlic loves, crushed
60 ml Hot Peri Peri sauce (see recipe below) 4 Tbsp soy sauce 1 medium carrot, sliced in long thin strips 1 cup green beans, sliced lengthwise 200 g button mushrooms 150 g bok choy, chopped 100g Chinese cabbage, chopped
Directions Heat oil in a wok over high heat. Add the garlic and ginger and cook for 1 minute, stirring constantly.
Add the chicken and cook on all sides, until golden brown.
Add the hot Peri Peri sauce and soy sauce and stir well.
Add the carrot, green beans, mushrooms, bok choy and Pe tsai and stir fry for 2 more minutes. Notes and tips Hot Peri Peri sauce recipe
Ingredients 4 fresh hot chili peppers (jalapeno, poblano or similar), chopped 8 Tbsp lemon juice or lime juice 10 - 12 Tbsp olive oil (or more to achieve desired consistency) 1 Tbsp cayenne pepper or red pepper (adjust quantity to taste) 2 tsp garlic powder 2 Tbsp paprika 2 tsp salt 2 Tbsp dried oregano (or to taste)
