Queso flameado recipe

Onions and belle peppers first sauteed, then topped with grated cheese and baked in the oven until the cheese melts, served on warm tortillas with salsa. A perfect, easy to make Mexican appetizer.
Preparation time: 5 minutes, Cooking time: 20 minutes, Serves: 4 

Ingredients

2 Tbsp olive oil
2 cups chopped red or white onions
2 cups chopped red, yellow, orange and /or green bell peppers
2 cups chopped white mushrooms
4 cups shredded mild cheddar or Monterey Jack cheese

4 flour or corn tortillas

Directions

Saute onions, bell peppers, and mushrooms in the olive oil until the onions are soft and slightly brown.

Add the sauteed vegetables and grated cheese in a medium oven safe bowl. Heat the bowl in the oven at 350 F for 10 to 12 minutes or until the cheese is melted.

Serve queso flameado with warm flour or corn tortillas and a fresh salsa.
