Ingredients For the steak marinade 1/2 cup of fresh lime juice 4 cloves garlic 1/4 cup cilantro 1 pickled jalapeno chile 1 tsp ground cumin 1 tsp salt 1 tsp black pepper
2 lb skirt steak 1 tsp of vegetable oil Four spring onions, cut in 3 to 4 inch pieces
Flour tortillas
Directions Marinate the steak In a bowl add all the marinade ingredients and whisk well to combined.
Place the steak in a pan and pour over the marinade. Cover with plastic wrap and refrigerate for 3 to 4 hours (the longer the better).
Cook the steak Remove the steak from the refrigerator, rinse under cold water and let it come to room temperature.
Preheat the broiler. Place a large skillet or frying pan over high heat (make sure the pan has a metal handle since it will be placed under the broiler later). When the pan is hot, add the vegetable oil and grease the bottom. Add the steak and cook for five minutes on the first side, then turn over and cook for 2 to 3 minutes more. Remove from the heat, add the spring onions and place the pan under the broiler for
two more minutes, or until the spring onions are charred.
Remove the steak from the pan and let it rest for 10 minutes. After the meat has rested, slice it against the grain. Place the sliced steak in warm tortillas and serve with the spring onions on the side. Back to Tacos al carbon recipe
