Tex Mex sloppy Joes recipe

Delicious, easy to make Tex-Mex sloppy Joes. Ground beef is browned and cooked with onion, Mexican spices, tomato sauce and beer, then served on hamburger buns topped with onion, pickled jalapeno slices, cheese and guacamole.
Preparation time: 10 minutes, Cooking time: 40 minutes, Serves: 4 - 6 

Ingredients

1 1/2 lb (750 g) ground beef

1 medium onion, diced
1/2 green bell pepper, seeded and diced
2 cloves garlic, minced

1 chipotle chile in adobo sauce (you can use 2 Tbsp of homemade chipotle chile in adobo paste)
15 oz (425 g) canned tomato sauce
1 Tbsp smoked paprika
2 tsp dried oregano
2 tsp ground cumin
1/4 tsp ground allspice
A pinch of cayenne
2 Tbsp ketchup
2 tsp Worcestershire sauce

12 oz. (350 ml) beer
1/2 cup coriander (cilantro), divided
1 Tbsp lime juice
Salt and black pepper to taste

To serve
4-6 warm hamburger  buns
Guacamole
Pickled jalapeno slices
Finely chopped onion
Cotija cheese (substitute with feta or parmesan cheese)

Directions

In a large skillet over medium-low heat add the meat and cook, stirring constantly for about 10 minutes, until well browned. Drain fat and return to heat.

Add the onions and bell pepper and cook for 5 minutes more, stirring occasionally, until soft. Add the garlic and cook for 30 more seconds.

While the onions and pepper are cooking, mix the tomato sauce, chipotle chile, smoked paprika, oregano, ground cumin, allspice, cayenne, ketchup and Worcestershire sauce in a blender until you get a uniform mixture. Pour the tomato mixture and beer over the cooked meat and stir well to combine. Bring to a boil, lower heat to medium-low and cook for about 15 minutes. Add the coriander and lime juice and season with salt and black pepper to taste. Continue cooking until you get the desired consistency.

Serve on warm buns topped with any of the additional condiments.
