Coriander, caper and lime salad dressing recipe

A simple salad dressing based on olive oil and white wine vinegar, flavored with capers, garlic, coriander, mustard and lime juice.
Preparation time: 5 minutes, Cooking time: 1 minutes, Serves: 0 

Ingredients

1 clove garlic, finely chopped
1 1/2 tsp whole grain or Dijon mustard
Juice and rind of 2 limes (the rind finely grated)
1 Tbsp white wine vinegar
4 Tbsp olive oil
1 tsp capers
3 Tbsp finely chopped fresh coriander
Salt and freshly ground black pepper to taste

Directions

Place the mustard, lime rind, lime juice, garlic and white wine vinegar in a bowl and mix well. Slowly start pouring in the olive oil, whisking constantly, until well emulsified. Stir in the capers and coriander and season with salt black pepper to taste.

Cover with plastic wrap and refrigerate for a few hours before using.

The ingredients above make about 1 cup of salad dressing.

Notes and tips

Coriander, also known as cilantro is a herb, similar to parsley, very popular in Chinese and Mexican cuisine.
