Honey and lemon salad dressing recipe

A creamy sauce using honey, mayonnaise, heavy cream and lemon juice, great with green salads as well as over fish. Try adding your favorite herbs to give the sauce a change in taste and aroma.
Preparation time: 5 minutes, Cooking time: 1 minutes, Serves: 0 

Ingredients

1/4 cup heavy cream
1/2 cup mayonnaise (use low fat mayonnaise for a lighter version)
2 Tbsp lemon juice
1/4 cup honey
1/2 garlic clove, minced
1/2 tsp dried dill (or 1 Tbsp dill, finely chopped)
Salt and freshly ground black pepper to taste

Directions

In a bowl add the mayonnaise and cream and whip using a wire whisk until the mixture forms soft peaks. Set aside.

In another bowl combine the honey with the lemon juice. Beat with an electric mixer on medium speed until well blended. Add mayonnaise and sour cream mixture and beat on low speed until well blended.

Cover with plastic wrap and refrigerate for several hours until needed.

The above ingredients will make about 1 cup of the sauce.

Notes and tips

Dill goes well with fish. If you do not like dill or you would like to experiment, you can try other herbs, fresh or dried, like oregano, thyme, tarragon, parsley, fennel seeds, chives etc.
