Red onion or shallot dressing recipe
Share this recipe on FacebookA mild, delicious salad dressing with an oniony, sweet taste. Great with salads based on lettuce, rocket, baby spinach or similar.

Ingredients
1/2 cup olive oil
1/4 cup red wine vinegar
1 medium shallot or 1 small red onion, roughly shopped
1/3 clove garlic, crushed
1/4 tsp dried basil
1/4 tsp black pepper
Salt to taste
Directions
Combine all the ingredients in a blender and process at highest speed for about a minute, until the onion or shallot is completely dissolved. The resulting dressing should be creamy and have a pink color if using a red onion.
Cover and chill overnight in the refrigerator.
