Simple salad dressing with cherry tomatoes and fresh basil leaves recipe

A simple but tasty salad dressing using olive oil, vinegar, onion, fresh basil and fresh cherry tomatoes as main ingredients. If you do not have fresh basil, substitute with 1/2 tsp of dried basil.
Preparation time: 5 minutes, Cooking time: 2 minutes, Serves: 0 

Ingredients

Fresh Tomato Dressing

2 garlic cloves
1 shallot, roughly chopped
2 Tbsp red wine vinegar
2 teaspoons balsamic vinegar
5 Tbsp extra virgin olive oil

1/2 cup cherry tomatoes, halved
1/2 cup chopped fresh basil leaves
Salt and freshly ground pepper to taste

Directions

In a blender or food processor add the garlic, shallot or onion, red wine vinegar, balsamic vinegar and olive oil. Process at high speed for about a minute, until the sauce is smooth and well blended.
 
Add the tomatoes and basil and season to taste with salt and pepper. Process briefly, until the tomatoes are finely chopped but not completely poureed.

Pour into a bowl, cover with plastic wrap and chill in the refrigerator for several hours, until needed.

Makes about 1 cup of salad dressing.
