A typical Tiramisu recipe using Kahlua, a coffee liqueur, to flavor the ladyfingers and mascarpone cream. The use of the egg whites in the mascarpone mixture makes the filling a lot lighter. The cake is garnished with grated dark chocolate. You can also use sifted unsweetened cocoa powder.
Preparation time: 20 minutes, Cooking time: 10 minutes, Serves: 8

3 ounces Kahlua liqueur
½ cup strong Espresso coffee, cooled

1 pound (500g) Mascarpone cheese
2 ounces Kahlua liqueur
2 eggs, yolks and whites separated
1/3 cup icing sugar

20 ladyfingers
4 ounces dark chocolate, grated

Mix 3 ounces of Kahlua with the Espresso coffee, and set aside.

In a bowl, beat together the egg yolks, mascarpone cheese, icing sugar and 2 ounces of the Kahlua liqueur until you get a smooth mixture.

In another bowl, whip the egg whites until stiff and then fold into the cheese.
Dip half of the ladyfingers in the coffee and liqueur mixture and place them, flat side down on a serving dish. Spread half the Mascarpone mixture on top of the ladyfingers and sprinkle with half of the chocolate gratings to finish the first layer.

Repeat the above procedure with the remaining ingredients to do the second layer.

Cover with plastic wrap and refrigerate for at least 6 hours before serving.
